Ingredients
- 1 lb. ground pork sausage (see notes)
- ¼ teaspoon red pepper flakes
- ¼ cup butter
- ¼ cup flour
- 2 cups milk
- ½ teaspoon salt
- ¼ teaspoon onion powder
- ¼ teaspoon fresh ground black pepper
- 1 (8-count) tube refrigerated biscuits (such as Grands)
- 6 large eggs
- ¼ cup heavy cream
- 2 cups shredded Colby Jack or cheddar cheese
Instructions
- Preheat Oven: Set your oven to 350 degrees Fahrenheit and grease a 9×13-inch baking dish.
- Cook the Sausage: Brown the ground pork sausage in a skillet over medium heat. Add the red pepper flakes during the last few minutes of cooking. Once browned, set aside.
- Make the Gravy: In a heavy saucepan, melt the butter over medium-low heat. Whisk in the flour and cook for several minutes, whisking constantly. Gradually whisk in the milk, salt, onion powder, and black pepper. Continue whisking frequently until the mixture thickens. Stir in 1/2 cup of the cooked sausage into the gravy.
- Prepare the Casserole: Cut the refrigerated biscuits into quarters and arrange them in a single layer in the bottom of the greased baking dish. Top with the remaining browned sausage and half of the shredded cheese.
- Add the Eggs: In a separate bowl, whisk together the eggs and heavy cream. Pour the egg mixture evenly over the cheese in the casserole dish.
- Top with Gravy and Cheese: Pour the prepared gravy over the egg mixture, then sprinkle the remaining shredded cheese on top.
- Bake: Place the casserole in the preheated oven and bake, uncovered, for 30-35 minutes. The casserole is done when it is puffed up, the eggs are set, and the top is lightly browned.
Notes
- Make-Ahead Gravy: You can prepare the gravy up to 24 hours in advance and store it in an airtight container in the refrigerator.
- Thinning the Gravy: If the gravy becomes too thick, thin it out with a couple of tablespoons of milk at a time.
- Cheese Variations: Feel free to switch out the Colby Jack or cheddar cheese with Monterey Jack, Pepper Jack, or Gouda for a different flavor profile.
- Casserole Doneness: The casserole is ready when it is puffed up, the eggs are fully set, and the top is a beautiful golden brown.
