  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • ¾ cup chicken broth
  • 1 chicken bouillon cube
  • 1 ¼ cups half-and-half (half cream, half milk)
  • 3 tablespoons cream cheese, softened
  • ¾ cup Parmesan cheese, grated
  • 3 cups fresh spinach
  • 1-2 tablespoons lemon juice (optional)

Seasonings

  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon mustard powder
  • 1 teaspoon dried parsley

Instructions

Prep Work

  1. In a large measuring cup with a spout, combine the chicken broth, chicken bouillon, half-and-half, and seasonings. Set aside.
  2. Measure out the remaining ingredients before starting.

Make the Chicken

  1. Slice the chicken breasts in half lengthwise to create four thinner pieces. Place them between two pieces of plastic wrap and use the textured side of a meat mallet to pound them to ½ inch thickness. Pat the chicken completely dry.
  2. Season each piece generously with lemon pepper seasoning. Dredge the chicken in flour, ensuring an even coating, and tap off any excess.

  5. Return the chicken to the skillet, including any juices from the plate. Spoon the sauce over the chicken. Cover the skillet partially and let the chicken heat through for about 5 minutes.
