Ingredients

  • 1 1/4 pounds skinless, boneless chicken breast
  • 2 (15-ounce) cans great Northern beans
  • 1 (15-ounce) can white corn
  • 1 (14-ounce) can chicken broth
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (4-ounce) can chopped green chile peppers
  • 1 (1.25-ounce) packet taco seasoning
  • 1/2 cup sour cream
  • 1/2 cup shredded pepper Jack cheese (or to taste)

Instructions

Step 1: Layer the Ingredients

Start by layering the great Northern beans and white corn at the bottom of your slow cooker pot. Place the skinless, boneless chicken breasts on top of the beans and corn.

Step 2: Prepare the Broth Mixture

In a medium bowl, combine the chicken broth, cream of chicken soup, chopped green chile peppers, and taco seasoning. Stir until well blended.

Step 3: Add the Broth Mixture

Pour the broth mixture over the chicken in the slow cooker, ensuring that the chicken is fully covered.

Step 4: Cook

Cover the slow cooker with the lid and cook on low for 8 hours. After the cooking time is complete, check the chicken’s internal temperature to ensure it has reached at least 165 degrees Fahrenheit. Once cooked, use two forks to shred the chicken into bite-sized pieces.

Step 5: Add Creaminess

Stir in the sour cream and shredded pepper Jack cheese. Allow the cheese to melt, which should take about three to five minutes.
