Ingredients:
- 12 ounces egg noodles
- 2 tablespoons unsalted butter
- 1 ½ pounds thinly sliced beef steak (such as petite shoulder)
- 1 medium onion, chopped
- 12 ounces cremini mushrooms, sliced
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups low sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 2/3 cup sour cream
- Kosher salt and freshly ground black pepper
- Chopped fresh parsley, for garnish
Instructions:
- Cook egg noodles according to package instructions, then drain well.
- In a Dutch oven or large skillet over medium-high heat, melt 1 tablespoon of butter. Add the steak and cook until browned on both sides, working in batches if needed. Remove the steak to a plate and cover to keep warm.
- Add the remaining tablespoon of butter to the skillet along with the chopped onions and sliced mushrooms. Cook over medium-high heat for 4-5 minutes until the onions are soft and mushrooms are browned.
- Reduce heat to low, add minced garlic, and cook for 1 minute. Sprinkle in flour and stir constantly for another 2 minutes.

- Remove from heat and stir in sour cream. Season with salt and pepper to taste. Add the cooked noodles and beef back to the skillet, simmering gently for 1-2 minutes to heat everything through.
