Ingredients
- 2 cups fresh Italian parsley, loosely packed
- 5 garlic cloves, peeled and smashed
- 2 tablespoons roughly chopped shallots
- 2 tablespoons red wine vinegar
- Juice of ½ lemon (about 2 tablespoons)
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red chili flakes
- ½ – ¾ cup extra-virgin olive oil
Instructions
- In a food processor, combine all ingredients except the olive oil. Pulse a few times until the ingredients start to break down.
- Slowly drizzle in the olive oil, starting with ½ cup. Add more as needed until you reach your desired consistency, pulsing briefly each time. Avoid over-pureeing—chimichurri should have a slightly coarse texture.
- Serve over grilled or smoked meats like beef, chicken, pork, or fish, and it’s also fantastic on vegetables. Enjoy!
