- 2 cups day-old white rice, preferably long-grain
- 2 large eggs, beaten
- ½ small yellow onion, diced
- 2 tablespoons frozen peas and carrots, thawed (optional)
- 1 tablespoon Shaoxing rice wine (optional)
- 2 tablespoons light soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon toasted sesame oil (optional)
- 1 green onion, sliced (just the green part, for garnish)
- Toasted sesame seeds (optional, for garnish)
- Oil, as needed
Instructions
- Prepare the Rice: Gently break apart the day-old rice by rubbing it between your hands. Alternatively, place the rice in a sealed gallon freezer bag and rub it until grains are separated. Set aside.
- Cook the Eggs: Heat about 2 tablespoons of oil in a wok or large nonstick pan over medium-high heat. Once the oil is hot, add the beaten eggs. Let them cook for a few seconds until they start to bubble, then scramble into small pieces. Remove the eggs from the pan and set aside.
- Sauté Vegetables: In the same pan over medium-high heat, add a small amount of oil. When the oil is hot, add the diced onion, peas, and carrots. Stir-fry briefly until the onion becomes fragrant and translucent, about 15–30 seconds.
- Combine Ingredients: Add the rice and scrambled eggs back into the pan, along with another drizzle of oil, about 1 tablespoon. Stir-fry briefly to mix everything together.
- Add Flavor: Drizzle the Shaoxing rice wine around the pan and stir-fry for about 30 seconds until the alcohol cooks off and the rice is fragrant. Add the soy sauce and oyster sauce, and continue stir-frying for a few minutes until the rice is evenly coated and hot.
- Finish and Garnish: Add the sesame oil and sliced green onions, tossing briefly to combine. Garnish with more green onion and sesame seeds if desired.
