  2. In a 7-inch nonstick skillet, melt the butter over low heat. Wait until the butter begins to foam but doesn’t brown.
  3. Remove the skillet from the heat and pour in the eggs. Whisk the top of the eggs vigorously, avoiding contact with the bottom of the pan.
  4. Return the skillet to the heat and continue whisking the eggs until they become very foamy. Once foamy, sprinkle the shredded cheddar cheese on top and whisk to incorporate.
  5. Let the bottom of the eggs set for 5-7 seconds. Then, use a silicone spatula to gently push the eggs from the edge of the pan towards the center. Tilt the pan so the uncooked eggs can flow into the created space.
  6. Continue moving the cooked eggs into the center with the spatula while rotating the pan to allow uncooked eggs to hit the hot surface.
  7. After 30 seconds, the eggs will be mostly set. Remove the skillet from the heat, and let the residual heat finish cooking the eggs.
  8. Gently fold the eggs so any remaining wet spots touch the pan to finish setting.
  9. Using the spatula, create “slices” to form smaller bites that resemble scrambled eggs.
  10. Season with salt, pepper, and optional chives. Transfer to a serving plate and serve immediately.
