Ingredients
- 12 oz brown rice noodles
- 1 Tbsp neutral oil (avocado, olive, or refined coconut oil)
- 6 cloves garlic, minced
- 1/4 to 1/3 cup low-sodium soy sauce or tamari
- 2 Tbsp vegetable broth
- 1 1/2 Tbsp rice vinegar
- 2 Tbsp toasted sesame oil
- 1 Tbsp honey or maple syrup
- 2 Tbsp tahini
- 2 tsp sriracha
- 1/2 tsp ground ginger
Instructions
1. Cook the Noodles:
- Bring a large pot of water to a boil and cook the noodles according to package instructions. Drain and set aside.
2. Prepare the Garlic:
- Mince the garlic finely or press it using a garlic press to achieve a very fine texture.
3. Sauté the Garlic:
- In a large pan, heat the neutral oil over medium heat. Add the garlic and sauté until it begins to turn golden brown on the edges, releasing its aroma.
4. Make the Sauce:
- While the garlic is sautéing, whisk together the soy sauce, vegetable broth, rice vinegar, sesame oil, honey or maple syrup, tahini, sriracha, and ground ginger in a bowl. Ensure there are no clumps and that the tahini is well incorporated.
5. Combine Sauce and Garlic:
- Pour the sauce into the pan with the garlic and stir well. Let it simmer for 2–3 minutes until it thickens slightly.
6. Toss the Noodles:
- Add the cooked noodles to the pan and toss to coat them evenly in the sauce.
7. Garnish and Serve:
- Serve the noodles hot, garnished with sliced scallions, red pepper flakes, and crushed peanuts if desired. Enjoy your flavorful Garlic Sesame Noodles!
