Ingredients

Hamburger Steaks

  • 2 tablespoons olive oil
  • 1 ½ lbs. ground beef (85% lean)
  • 4 tablespoons frozen butter, shredded
  • ½ cup yellow onion, very finely minced
  • 2 teaspoons yellow mustard
  • 3 teaspoons Worcestershire sauce
  • 3 cloves garlic, minced
  • Salt and pepper, to taste

Gravy

  • 2 yellow onions, sliced into ¾-inch strings
  • 3 tablespoons cold unsalted butter, divided
  • 1 cup chicken broth
  • 1 cup beef broth
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 ½ teaspoons Worcestershire sauce
  • ¼ cup cold water + 3 tablespoons cornstarch

Instructions

Prepare the Steaks

  1. In a large bowl, gently combine the ground beef, minced onion, shredded frozen butter, garlic, Worcestershire sauce, and mustard. Avoid overmixing to keep the steaks tender.
  2. Form the mixture into evenly sized oval-shaped patties. Refrigerate for 15 minutes to help them hold their shape.
  3. While the steaks chill, measure out the remaining ingredients for the gravy.
  4. Remove the patties from the refrigerator and season both sides with salt and pepper.
  5. Heat the olive oil in a large skillet over medium-high heat. Add the steaks and sear for 2-3 minutes per side until browned. Handle gently to prevent breaking. Remove the steaks and set them aside.

Make the Gravy

  1. Reduce the skillet heat to medium-low. Melt 2 tablespoons of butter in the same pan and add the sliced onions. Cook for 15-20 minutes, stirring occasionally, until the onions soften and caramelize.
  2. Pour in the chicken broth, beef broth, onion powder, garlic powder, and Worcestershire sauce. Use a silicone spatula to scrape up any browned bits from the bottom of the skillet, enhancing the gravy’s flavor.
  3. In a small bowl, mix the cornstarch and cold water until smooth. Bring the gravy to a boil, then slowly whisk in the cornstarch mixture. Once thickened, reduce the heat to medium-low.

Finish the Dish

  1. Return the seared hamburger steaks to the skillet. Spoon the gravy over the top of the patties.
  2. Cover the skillet and let the steaks cook for 10 minutes or until their internal temperature reaches 160°F.
  3. Swirl in the remaining 1 tablespoon of cold butter at the end for a rich, velvety finish to the gravy.
  4. Sprinkle with fresh parsley and serve hot with mashed potatoes and roasted carrots.

Tips

  • Caramelize Onions Slowly: Low and slow cooking brings out the natural sweetness of the onions.
  • Deglaze the Pan: Scraping up browned bits adds depth to the gravy.

Variations and Substitutions

  • Ground Meat Options: Use ground turkey, pork, or a blend for a twist on the classic.
  • Gluten-Free: Replace Worcestershire sauce with a gluten-free version and use arrowroot powder instead of cornstarch.
  • Add Mushrooms: Sauté sliced mushrooms with the onions for a hearty addition to the gravy.
  • Spice it Up: Add a pinch of cayenne pepper or smoked paprika for extra flavor.

FAQs

Can I make this recipe ahead of time? Yes! Prepare the hamburger steaks and gravy separately, then reheat them together on the stovetop before serving.

Can I freeze leftovers? Absolutely. Store cooled steaks and gravy in an airtight container for up to 3 months. Thaw in the refrigerator overnight and reheat gently on the stove.

What if I don’t have a meat thermometer? Cook the steaks until they’re no longer pink in the center and the juices run clear.

Serving Suggestions

  • Sides: Serve with creamy mashed potatoes, roasted carrots, green beans, or buttered peas.
  • Bread: Pair with crusty bread or dinner rolls to soak up the flavorful gravy.
