Ingredients

For the Dough:

  • 2 ¼ teaspoons instant yeast (equal to 1 packet, see notes)
  • ¾ cup warm water (105-115°F)
  • 2 teaspoons sugar
  • 2 cups all-purpose or bread flour, plus up to 1/3 cup as needed (250-290 g)
  • 1 teaspoon salt
  • ¼ teaspoon garlic powder
  • 2 tablespoons olive oil, plus more for the bowl and crust

For the Pizza:

  • ½ cup pizza sauce
  • 1 ½ cups mozzarella cheese (whole milk, low moisture)
  • Desired pizza toppings

Pizza Garnishes:

  • Roughly chopped parsley
  • Freshly grated Parmesan cheese
  • Red pepper flakes

Instructions

  1. Activate the Yeast:
  • In a small bowl, combine the yeast, sugar, and warm water. Stir until dissolved, cover with plastic wrap, and let sit for 5 minutes to activate.
  1. Prepare the Dough:
  • In a large mixing bowl, combine the salt, garlic powder, and half of the flour. Add the yeast mixture and olive oil. Stir with a wooden spoon until well combined.
  • Gradually add the remaining flour, stirring until the mixture forms an elastic ball that slightly sticks to the sides of the bowl.
  1. Knead the Dough:
  • Dust your hands with flour and knead the dough in the bowl for 3-5 minutes. If the dough feels too sticky, add small dustings of flour, up to an additional 1/3 cup. The dough is ready when it slowly springs back after being poked.
  1. Let the Dough Rise:
  • Lightly oil a large glass bowl with olive oil and place the dough ball inside. Cover with plastic wrap and let it rise for 30-60 minutes at room temperature, or until doubled in size. For a longer rise, refrigerate overnight.
  1. Preheat the Oven:
  • During the last 30 minutes of rising, preheat your oven to 450°F. If using a pizza stone or pan, place it in the oven to preheat as well.
  1. Prepare the Dough for Baking:
  • Gently punch down the dough and knead it 5 times to smooth it out. Shape the dough into a 12-inch circle using your hands or a rolling pin. Create a crust edge by pinching the perimeter.
  • If preheating a pizza pan or stone, remove it from the oven and sprinkle it lightly with flour. Transfer the dough onto the prepared surface.
  1. Assemble the Pizza:
  • Use a fork to poke small holes in the dough to prevent bubbling. Brush with 1 tablespoon olive oil.
  • Spread pizza sauce evenly over the dough, followed by mozzarella cheese and your chosen toppings.
  1. Bake the Pizza:
  • Bake in the preheated oven for 13-15 minutes. Ensure the bottom crust is golden and crisp before removing it from the oven. Avoid over-browning the top.
  1. Finish and Serve:
  • Check the bottom of the crust for doneness. Garnish with parsley, grated Parmesan, and red pepper flakes if desired. Slice and enjoy!
