Ingredients

Broccoli

  • 1-2 tablespoons peanut oil (or substitute vegetable oil)
  • 2 cups broccoli florets

Salmon

  • 1 ½ lbs. salmon (cut into 4 filets, skin on or off)
  • ¼ teaspoon each: smoked paprika, salt, pepper, mustard powder, onion powder
  • ½ teaspoon brown sugar
  • 1 tablespoon peanut oil (or substitute olive oil)

Sauce

  • ½ cup beef broth
  • ½ cup chicken broth
  • 4 cloves garlic (minced)
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons packed brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon hot sauce (optional)
  • ½ teaspoon ground ginger
  • ¼ teaspoon sesame oil
  • 2 tablespoons cornstarch
  • Pinch of red pepper flakes

For Serving

  • 3 cups cooked rice (any variety; see notes for cooking tips)

Instructions

Prep Work

  1. Combine the salmon seasonings in a small bowl: smoked paprika, salt, pepper, mustard powder, onion powder, and brown sugar.
  2. In a medium measuring cup with a spout, mix the sauce ingredients: beef broth, chicken broth, garlic, soy sauce, honey, brown sugar, apple cider vinegar, hot sauce (if using), ground ginger, sesame oil, cornstarch, and red pepper flakes. Ensure the ingredients are cool to prevent activating the cornstarch prematurely. Set aside.
  3. Preheat your oven to 375°F.

Sauté the Broccoli

  1. Heat the oil in a 12-inch oven-safe skillet over medium-high heat. Add the broccoli and cook for about 4 minutes, until slightly softened. Add a splash of oil if needed. Remove the broccoli from the skillet and set aside.

Prepare the Salmon

  1. Pat the salmon filets dry and evenly sprinkle the seasoning mixture over the top. Press gently to adhere the seasoning.
  2. Heat the oil in the skillet over medium-high heat. Place the salmon filets in the skillet, skin-side down if applicable, and sear for 3 minutes.

Cook the Salmon and Sauce

  1. Reduce the heat to medium and pour the prepared sauce into the skillet. Bring it to a boil and allow it to thicken, then reduce the heat to medium-low. Use a spoon to baste the salmon with the sauce as it cooks for an additional 2 minutes.
  2. Add the broccoli back into the skillet around the salmon.

Bake and Broil

  1. Transfer the skillet to the oven and bake for 7 minutes. Increase the oven temperature to a low broil (400°F) and broil for up to 2 minutes to caramelize the glaze on the salmon. Keep a close eye to prevent burning.
  2. Remove the skillet from the oven and spoon additional glaze over the salmon. Let the salmon rest for 5-10 minutes to finish cooking internally, ensuring it reaches an internal temperature of 145°F before serving.

Serve

  1. Transfer the salmon and broccoli to serving plates, drizzle with extra sauce, and serve with your choice of cooked rice.

  • Sweet and Savory: The honey glaze offers the perfect balance of sweetness and tangy flavor.
  • Restaurant Quality at Home: Create an impressive dish with a caramelized finish and bold sauce.
  • One-Pan Convenience: Easy cleanup with everything cooked in one skillet.

Tips

  • Perfect Sear: Make sure the skillet is hot before adding the salmon to achieve a crisp outer layer.
  • Avoid Overcooking: Remove the salmon from the oven once it reaches 140°F; it will rise to 145°F while resting.
  • Basting: Regularly baste the salmon with the glaze during cooking for deeper flavor.

Variations and Substitutions

  • Fish Alternatives: Try this recipe with cod, halibut, or trout for a similar effect.
  • Vegetable Options: Swap broccoli for asparagus, green beans, or zucchini.
  • Spice Level: Adjust the hot sauce and red pepper flakes for more or less heat.

FAQs

Can I use frozen salmon? Yes, thaw it completely and pat it dry before seasoning and cooking.

What if I don’t have an oven-safe skillet? Transfer the salmon and sauce to a baking dish after searing and proceed with baking.

Can I make this ahead of time? The sauce can be prepared in advance and stored in the refrigerator. Cook the salmon fresh for the best texture.

Serving Suggestions

  • Pair with steamed jasmine rice or brown rice for a hearty meal.
  • Serve alongside a crisp green salad or roasted vegetables.
