Ingredients
- 4 tortillas
- 16 oz rotisserie chicken, chopped or shredded
- 2 tablespoons fresh basil, chopped or chiffonade
- 1 cup part-skim mozzarella cheese
- ½ jar pizza sauce (about 135 grams)
Instructions
- Prepare the Skillet: Heat a skillet over medium-low heat and lightly coat it with cooking spray or brush with olive oil.
- Assemble the Quesadilla: Place a tortilla in the skillet. On one half of the tortilla, layer the chopped rotisserie chicken, fresh basil, and part-skim mozzarella cheese. Drizzle the pizza sauce over the toppings.
- Cook the Quesadilla: Allow the tortilla to cook for a few minutes, watching for the cheese to start melting and the underside of the tortilla to turn golden brown.
- Fold and Flip: Carefully fold the empty half of the tortilla over the filled half to form a half-moon shape. Cook for an additional minute, then flip the quesadilla to brown the other side until it is crispy and the cheese is fully melted.
- Serve: Remove the quesadilla from the skillet and cut it into halves or quarters. Serve immediately, enjoying the melty cheese and savory flavors!
