Ingredients

  • 2 tbsp olive oil
  • 1 1/2 lbs chicken thighs, cut into 1-inch pieces
  • 3 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt, plus extra for seasoning
  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into 1/2-inch cubes (about 1 lb)
  • 3 cups chicken broth
  • 1 bay leaf
  • 1/2 cup milk
  • 1 cup frozen green peas
  • Black pepper, to season

Instructions

  • Prepare the Chicken:
  • Dice the chicken thighs into 1-inch pieces and season with salt and pepper.
  • Sear the Chicken:
  • In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook for 4–5 minutes, until browned on all sides (they don’t need to be fully cooked). If your slow cooker has a removable, stovetop-safe pot, you can sear the chicken directly in it.
  • Add Seasonings:
  • Transfer the seared chicken to the slow cooker. Sprinkle with flour, thyme, rosemary, and additional salt, stirring to coat the chicken evenly.
  • Combine Ingredients in the Slow Cooker:
  • Add garlic, onion, carrots, and potatoes, and stir to combine. Pour in the chicken broth and add the bay leaf.
  • Cook the Stew:
  • Cover and cook on low for 7–8 hours or on high for 3–4 hours, until the vegetables are tender and the flavors have melded.
  • Finish the Stew:
  • Add the milk and frozen peas, stir to combine, and cook on high for an additional 10–15 minutes, until the peas are heated through. Adjust the thickness of the stew if needed by adding a bit more flour to thicken or a splash of broth to thin.
  • Season and Serve:
  • Taste and adjust the salt and pepper as needed. Serve warm and enjoy! Leftovers can be refrigerated for up to 5 days or frozen for up to 3 months.
