  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper

For the Cheese:

  • 8 ounces low-moisture mozzarella cheese, shredded and frozen

Instructions

For the Crust:

  1. In the bowl of a stand mixer, combine the bread flour, sugar, yeast, and salt. Stir to mix.
  2. Attach the dough hook to the mixer and set the speed to low. Gradually add the warm water and 2 tablespoons of olive oil. Mix until the dough forms into a ball around the hook.
  3. If the dough is sticky, add flour, 1 tablespoon at a time, until it becomes firm. If it’s too dry, add water, 1 tablespoon at a time.
  4. Transfer the dough to a lightly floured surface and knead gently until smooth.

  6. Once risen, turn the dough out onto a floured surface and divide it into two equal pieces. Wrap one piece tightly in plastic wrap and freeze it for future use.
