CREAMY LEMON SQUARES

  • 4 tbsp unsalted butter, melted
  • 24 squares graham crackers
  • ¼ cup of sugar

  • 2 egg yolks
  • 1 can (12oz) sweetened condensed milk
  • ½ cup of lemon juice

Instructions:

Prepare the Crust:

  • Preheat your oven to 350°F.
  • Butter and line an 8-inch square baking pan with parchment paper, leaving some paper hanging on two sides for easy removal.
  • Break up the graham crackers and pulse them in a food processor until crumbled.
  • Add sugar and melted butter to the crumbled crackers, then pulse once more until combined.
  • Press this crumble mixture firmly into the bottom and 1 inch up the sides of the prepared pan to create a crust.
  • Bake in the preheated oven for 10-12 minutes until lightly browned, then let the crust cool completely in the pan.

Prepare the Lemon Filling:

  • While the crust is cooling, prepare the creamy lemon filling.
  • In a bowl, whisk together sweetened condensed milk and egg yolks until smooth.
  • Add fresh lemon juice to the mixture and whisk until well combined.

Assemble and Bake:

  • Once the graham cracker crust has cooled, pour the creamy lemon filling into it.
  • Bake in the preheated oven for 15-20 minutes until the filling is set and the crust is browned.
  • Allow the creamy squares to cool completely in the pan on a cooling rack. For firmer squares, refrigerate after cooling to room temperature.
  • Once cooled, remove the lemon square from the pan using the hanging parchment paper and place it on a cutting board.
  • Cut into 16 mini squares or 9 larger squares and serve.
